- New potato 300 halves
- Cauliflower 250 gm chopped
- Medium carrots 2
- Small red cabbage 1/2 shredded
- Bean sprouts 2 cup or 160 gm
- Long green cucumber 1
- Boiled eggs 4
- Black and yellow raisins 3-4 tbsp.
Ingredients of Peanut Dressing:
- Butter 300 gm
- Curry powder 1 1/2 tsp.
- Ground cumin 1 tsp.
- Plain flour 1 tsp.
- Sweet chilly sauce 2 tbsp.
- Crunchy peanuts 1/2 cup
- Brown sugar 1 tbsp.
- Coconut cream 400 ml
- Medium onion finely chopped
- Peanuts crushed 1 cup
- Boil, steam or microwave potatoes, cauliflowers, carrots separately until just tender, drain, rinse under cold water, drain.
- Place cabbage on plate top with cooked vegetable, sprouts, cucumber and egg, peanut dressing and raisins.
- Heat butter in pan, then add onion and cook until it become soft.
- Next add peanuts, curry powder, cumin, flour and chilly sauce, cook, stirring 2 minutes stir in peanut crushed, sugar and coconut cream.
- Simmer uncovered about 10 minutes or until slightly thickened.
